The Laboratory of Soft and Living Materials organized an outreach activity for the Freies Gymnasium Zürich about the science behind chocolate tempering and structural colour.

The students learnt how to control the crystallization of cocoa butter to obtain the right texture in chocolate. Moreover, thanks to a process developed by some colleagues at the Complex Materials group at ETH, the students made colourful chocolate by using diffraction gratings as a solidification template. This helped them understand the concept of structural colour in a delicious way!
